Best to contact Latigo at Swiss Products. The bolt latch appears to be held by some sort of rivet or other friction retainer. The hole is drilled through the side of the receiver, but there is no corresponding hole through the other side for a punch. I would not recommend prying; this is a job for someone who knows what he is doing.
I had to replace the bolt stop on a M1911, but that was relatively easy to accomplish. The K31 is not designed the same way, so I can only advise caution.

Haven't done this in years, but here's my best recollection -
The K31 release lever pivots on the pin visible near its forward end. The inner end of the pin is a slip-fit in a hole bored in the right receiver wall - the outer end is a tight (permanent) fit in the lever. To remove, first remove stock, then push rear end of lever down so hook clears notch in which it normally sits. Once lever is clear of receiver, it can be pulled/wiggled straight out, bringing the attached pin and spring with it. You may have to fiddle with the spring to disengage from receiver. (Before dismounting, note how the spring ends rest on lever and receiver - so you can reproduce the arrangement on reassembly (which is otherwise pretty self-evident).
